Coogee Common

This project transforms the heritage-listed Coogee Hotel into a welcoming, garden-to-plate restaurant where the landscape and the historic building work together as one.

The old limestone structure has been gently restored, with small additions made to house a new kitchen, amenities and indoor–outdoor dining rooms that open onto generous vegetable gardens. The result is an ensemble of old and new that feels like a relaxed coastal homestead—layered, lived-in, and full of places to gather, wander and linger.

A palette of raw, natural materials gives the building warmth and longevity: existing limestone walls, recycled and new timber, rammed concrete and terracotta. Salvaged elements play a part too; original windows removed for the extension now frame the kitchen pass, creating a quiet link between past and present.

The gardens are the heart of the project. They supply the restaurant, shape the experience and set the tone for everything that happens on site—from the farm-produce shop and fermenting rooms to garden tours and cooking classes held in the old kitchen. Bee hives and productive beds surround the building, echoing the market gardens that once defined this part of Coogee.
